Our highly skilled Japan-born Sushi Chefs, led by Executive Chef Yoshi Kinjo, start by sourcing only the most pristine fish from Japan. The quality of fish is based on Nakato's long-time relationships with purveyors in Japan who are familiar with the restaurant's extremely high standard.
Several times each week, those purveyors overnight large containers of ice-covered whole fish that were just caught in the waters of Japan. These boxes are brimming with everything from immense Bigeye, Yellowfin and Bluefin Tuna, as well as Salmon, Hamachi, Kinmedai, Unagi, Bonito, Uni and more.
Immediately upon arrival, Nakato's Sushi Chefs go to work breaking down each of these whole fish, utilizing the knife skills they learned during their multi-year apprenticeships in Japan and throughout the world.....
